veg head: savory grilled romaine salad

One of our favorite salads is this savory grilled romaine salad I came up with a while back.  It makes eating healthy seem naughty, and it’s always been a hit when I make it for guests.  This recipe is great to serve alongside fish or steak.  Grilling brings out a smoky, heartier flavor in the romaine.

Savory Grilled Romaine Salad

What you’ll need per salad:

  1. Romaine Heart, loose leaves removed or trimmed
  2. Olive or other oil
  3. 1/8 Cup Chopped Walnuts
  4. 1/4 of an Avocado, chopped
  5. 1/8 Cup Crumbled Blue Cheese
  6. Balsamic Vinegar
  7. Salt

What to do:

Preheat grill.  If making meat or fish on the grill, do that first and keep the grill heated.  Brush oil on the romaine heart.  Season with salt to taste.  Place romaine on the grill, heat source on lowest setting for gas.  Close the grill lid and cook about 3-5 minutes.  If you start to smell the lettuce, it’s time to turn it.  Turn when first side is to desired level of done.  Cook other side the same way.  Remove from grill.  Top the cooked romaine with walnuts, avocado and blue cheese.  Drizzle with balsamic vinegar and serve while warm with a knife.

NOTES:  Try grilled romaine salad with different nuts and cheeses or without the avocado.  This salad also tastes great without the balsamic and with blue cheese or ranch dressing instead.  It’s very versatile!
