Ok. So maybe it isn’t famous like the Kardashians. BUT it is a favorite of our family and circle of friends. I’ve shared the recipe countless times. That counts for something, right? People are always surprised with how easy it is, and you can sub your favorite veggies or noodles and it will likely still taste just as great. I don’t mix it up much being the creature of habit that I am, so if you are ever invited over for dinner, this is likely the version you will get. I had a cousin who made something similar years ago and she layed it out like this: “Get some pasta, some veggies, cheese and italian dressing. Mix it together.” Done. I’ll be a little more specific for you though. Here goes!
A standard size box of bowties or rotini shaped pasta
2 Bell peppers, chopped (preferably not green but those will work if need be)
Small red onion, chopped
Log of mozzarella cheese cut into cubes
Large jar of PITTED kalamata olives
Standard size bottle of Tuscan Italian Dressing (this really is the secret ingredient-it HAS to be Tuscan for me! And BTW, the brand pictured is NOT my favorite. Trader Joe’s is, or Annie’s Naturals.)
Boil pasta according to package directions. Rinse with cold water. Add all other ingredients and stir. My husband loves it when the pasta is still warm and melts the cheese a little, but it’s also yummy the next day and as leftovers.
Possible veggie variations:
Broccoli, summer squash, cherry tomatoes, shredded carrots, cucumber, jicama.
